You will need:
1/2 Cup thinly sliced red onion (or chopped)
1/3 Cup diced celery
1/4 Cup torn fresh basil
12 Oz (3 Cups) shredded/chopped chicken
1/2 tsp salt or to taste
1/2 Cup plain Greek yogurt
21/2 tbs. fresh lemon juice
1 tbs honey
2 Cups fresh blueberries
1 pkg Arugula
2 tbs olive oil
1/4 tsp freshly ground black pepper
Combine first 4 ingredients & sprinkle with salt. Combine yogurt, lemon juice & honey & mix with other ingredients, gently stir in blueberries.
Place arugula in bowl & carefully add the mixture & toss gently. Comes out great & was good the next day also. Bon appétit!
